They are shaped like rice or potato balls, the recipes for which vary slightly.

To prepare these original semolina cutlets, housewives will need the following ingredients: - milk – 1 liter; - semolina – 14 tbsp. l.; - flour – 250 g; - sugar – 5 tbsp; - eggs – 2 pcs.; - vanillin – 1 sachet; - vegetable oil – 2 tbsp.

To prepare this dish, you can safely use the porridge left in the saucepan after the children's lunch. To vary the taste, you can add cottage cheese and raisins to the semolina dough.

How to cook meatballs

The initial stage of preparation is cooking thick semolina porridge from cereals and milk. Lumps will not form if you first soak the semolina in cold milk with a little added water for about 10 minutes. This time is enough for the cereal to swell. Rinse the bottom of the aluminum pan with cold water to prevent the porridge from burning. Then pour in the soaked semolina and cook after boiling over low heat, stirring constantly, for about 3 minutes.

When the porridge has cooled, beat two fresh chicken eggs into it and add vanilla sugar to taste. Next, mix all the ingredients and start forming the balls. They are easy to make with a tablespoon. Use a spoon to grab the semolina dough, and with your free hand, form hard lumps into even balls. Roll each semolina cutlet in flour or breadcrumbs. The final stage is frying the meatballs in vegetable oil until golden brown. You can steam semolina cutlets in a double boiler. This is much healthier for the stomach.

An excellent addition to semolina balls is jelly. You can cook jelly using milk, jam, juice or compote. For example, to prepare jelly from grape juice you will need the following products:

Grape juice – 750 ml; - potato starch – 40 g; - water – 100 g; - 1 slice of lemon.

The process of making jelly is as follows: the juice must be brought to a boil in a saucepan. Then slowly pour in the starch, previously diluted in cold water, in a thin stream. You need to brew this drink for about 3 minutes, stirring it constantly. It is recommended to use cooled jelly as a sauce for semolina balls. You can prepare other types of jelly in the same way.

Tender semolina balls are a delicious delicacy that is given to children for an afternoon snack in kindergarten. A simple recipe for a cheap, healthy and tasty dish. It is known that it is difficult to find fans of semolina porridge among children :) But absolutely everyone will eat semolina porridge in this form!

The process of preparing semolina balls for me takes place in two stages. I cook semolina porridge in advance, in the evening. It's much more convenient.

Boil water in a small saucepan. Add sugar and salt.

Then melt a piece of butter.

Gradually add semolina into boiling water. To prevent lumps from forming, the water must be stirred continuously. I pour the cereal not from a glass, but gradually, with a tablespoon. This makes it easier to regulate the thickness of the porridge.

For semolina balls, the porridge should be thick, but you need to remember that the porridge will thicken even more when it cools. Therefore, the finished hot porridge should look something like this. In terms of consistency, it can be compared to 15% sour cream. When stirring, a spoon mark should remain on the surface of the porridge.

You need to make meatballs from cooled porridge, which is why I cook it in the evening - I save time.

Stir the cooled porridge thoroughly and form smooth round balls the size of a small egg with your hands dipped in water.

Roll on all sides in semolina breading.

Fry in vegetable oil on both sides.

If desired, you can fry it stronger.

Carefully transfer the finished semolina balls to a plate. When hot, they are very fragile and tender, so it is better to place them separately from each other.

While the meatballs are cooling, you can prepare a sweet sour cream sauce for them. Nothing could be simpler. Beat 100 g of sour cream with a tablespoon of sugar and a pinch of vanillin for flavor.

When the meatballs are warm, place them on a serving plate.

  • eggs 1 pc.;
  • flour for breading;
  • pinch of salt.

Cooking method

  1. Pour the milk into a saucepan and let it heat up.
  2. When the milk boils, add salt, sugar and stir.
  3. Now you need to add semolina. Since the porridge will turn out to be very thick, a lot of semolina is taken for this amount of milk, so to prevent lumps from forming when adding cereal, reduce the heat to the very minimum or turn it off completely. Add semolina, constantly stirring it with milk. The porridge will thicken very quickly.
  4. This is what it will look like immediately after adding semolina.
  5. Stir it with a spoon and cook over low heat until it thickens to such a state that it does not fall off the spoon. Then remove from heat and leave until completely cool.
  6. Add a chicken egg to the cooled thick semolina porridge. If the egg is too large, you can add only half. Stir until the porridge remains very thick.
  7. Heat the ghee in a frying pan.
  8. Using your hands, form cutlets from thick semolina porridge and roll them in flour.
  9. Place them in a frying pan and fry them on one side.
  10. When they are browned, turn them over and fry on the other side.
    Place on a paper napkin to remove excess fat.
  11. Place the finished semolina cutlets on a dessert plate and pour over fruit jelly.

Cheesecakes from semolina porridge with cottage cheese

Ingredients

  • cottage cheese - 400 grams;
  • semolina - 3 tablespoons;
  • chicken egg - thing;
  • sugar - 2-3 teaspoons;
  • wheat flour - 1 tbsp. spoon;
  • salt - on the tip of the knife;
  • vegetable oil;
  • vanilla - 0.5 teaspoon.

Cooking method

  1. First, you need to pour the curd into a bowl and crush it with a fork. In order for the cottage cheese to be very tender and without grains, rub it through a sieve.
  2. Add one egg, semolina (add gradually), sugar, vanillin and salt to the ground cottage cheese. (If you have liquid cottage cheese, then you should mix it with semolina in advance and leave for 2 hours. During this time, the semolina will absorb water from the cottage cheese and swell. Thanks to this, your cheesecakes will become even more tender.) Mix everything thoroughly.
  3. Now the finished dough needs to be formed into balls. The easiest way to do this is with your hands: roll the ball from one hand to the other. The cheesecakes should all be of medium size, in this case there will be about 20 of them.
  4. Next, you need to roll the finished balls in flour. You can leave the cheesecakes in the form of balls or make them slightly flattened, like flatbreads.
  5. The frying pan with vegetable oil must be preheated. There should be a little vegetable oil. Place the curd balls in a frying pan and fry over medium heat until golden brown.
  6. Do not rush to immediately remove the cheesecakes from the heat as soon as they begin to brown - they will still be raw. Wait for the formation of a golden color and then you will have excellent cheesecakes!

Boil the porridge at a low boil for 2 minutes, and then remove the dish from the heat and throw in a piece of butter. Cover the pan with a lid, wrap it in a warm blanket and leave to steep for 10 minutes. Meanwhile, let's prepare the jelly: sort the berries, wash them, remove the seeds if necessary and put them in a deep bowl. Pour potato starch into a small container and pour a glass of cold water. Pour the remaining water into the pan with the berries and put it on the fire. As soon as it boils, add sugar to taste and stir.   • cow's milk – 150 ml;
  • sugar – 1 tbsp. spoon;

Melt a small piece of butter in a frying pan and send our semolina mixtures there. Fry them under a closed lid on the lowest heat. When a golden crust appears, carefully turn it over and bake for another 3 minutes.
