Semolina porridge in a slow cooker

Semolina has always surprised me because all other grains (rice, buckwheat, couscous...) need to be cooked in a 2:1 ratio, that is, two volumes of water, one volume of cereal, but with semolina it’s different. For a whole full mug (250 ml) of milk you need only 1 tablespoon of semolina. It boils so badly. Although, if you think about it, this is not surprising - there is a lot of starch in it.

If the child is thin, you need to feed him semolina porridge - it helps to gain weight. In general, semolina porridge is recommended to be given to children from 9 months to 1 year. I have studied this issue thoroughly ( book by Professor A.N. Antonov "Children's Nutrition".) and now I know exactly how to prepare semolina porridge, preserving the maximum beneficial substances of milk, semolina itself and butter added to the semolina porridge.

  1. Pour the milk into a saucepan (I use a small aluminum one) and bring to a boil, but do not boil! It is important not to boil milk, because its beneficial properties are killed by boiling. Moreover, repeated boiling is contraindicated for milk. And unboiled milk contains a full composition of useful substances - this is an amazing product. Probably the only one containing such a rich variety (full spectrum) of all vitamins and minerals.
  2. Add a tablespoon of sugar and a pinch of salt to the milk and stir.
  3. When the milk is close to boiling, arm yourself with a fork and a tablespoon filled with semolina (if with a slide, the porridge will be thicker, if without a slide, it will be thinner).
  4. We begin to shake the spoon so that grains of semolina fall into the milk and immediately stir it all with a fork (whisk like a whisk - we break up potential lumps).
  5. When all the semolina is in the milk, continue stirring and cook until the semolina swells - until the porridge is ready. It will take about 4 minutes - but see for yourself, it all depends on the semolina itself, it can also be different.
  6. When the porridge is ready, turn off the heat and add butter. The fact is that butter, if we want to preserve the vitamins A and C it contains, cannot be boiled. It must be placed in already prepared porridge.
  7. Pour the porridge into plates (you can put the oil directly into the plates), and the porridge can be served.
  8. And one more nuance. Before serving, before it has an eater, the porridge must be stirred (every 2 minutes), otherwise a film may form on its surface, which will turn into lumps.

You can also use semolina to make soufflé, pudding, mousse, semolina dumplings (very tasty!), manna pie (it’s especially cool to decorate it with fresh berries), it can be added to minced meat for cutlets and meatballs, you can make pancakes, meatballs from it, and it can be added to soup as a filling.

What are the benefits of semolina porridge?

The benefits of semolina porridge have been proven repeatedly. No wonder it was so popular during the Soviet period and was an integral part of breakfast in many families and in children's institutions...

Like many other porridges, semolina porridge is good for the stomach, for those who suffer from peptic ulcers, gastritis and other intestinal diseases. For breakfast you should not eat fried toast, but porridge. Liquid semolina is very suitable for dietary nutrition. It is good because there are practically no allergies to it (except perhaps to the milk with which it is prepared)

Semolina contains seventy percent starch, a lot of proteins, vitamins and minerals, and in the recipe I described how to prepare it in such a way as to preserve all this: semolina porridge has little fiber, and it is recommended during the postoperative period and during exhaustion. In case of chronic kidney failure, for example, dishes prepared from protein-free cereals are recommended - in this case, semolina is irreplaceable.

It is worth noting that cooking such porridge is very difficult, although it cooks quite quickly. The consistency of the dish largely depends on the selected ingredients and their proportions.

Semolina porridge is a healthy product containing a large amount of minerals necessary for humans. That is why all parents feed their children this wonderful dish.

It is best to consume this product for breakfast.

How to cook semolina without lumps?

As mentioned earlier, it is possible to cook semolina without lumps, but it is quite difficult.

Usually the secret is to stir the porridge all the time while cooking. And indeed it is. However, the nuances do not end there.

Besides stirring, there are many other tricks that are important to consider while cooking. Such features include the proportions of ingredients, the kitchen appliance used for cooking, and even the ingredients themselves.

It is very easy to get confused in all these subtleties, which is why recipes have been developed that take into account the factors mentioned above.

Recipes

The recipe is simple, however, even here there are some tricks. To prepare semolina without lumps, you need to choose the appropriate proportions.

The cooking process is very simple. The product must be cooked in milk, but in the following ratio: a liter of milk to half a glass of cereal.

As soon as the milk boils, you need to pour semolina into it in small pinches, while stirring. The absence of lumps in the porridge depends on this action.

Easy way

For it you will need:

  • 500 milliliters of milk of any fat content;
  • three tablespoons of semolina;
  • thirty grams of butter;
  • three tablespoons of sugar.

Let's look at the step-by-step cooking process

  • Pour milk into the pan.
  • Next, you need to sift the semolina through a sieve.
  • The cereal should be filled with water, mixed and drained.
  • The cereal must be added to the pan with milk and mixed thoroughly. It is best to pour semolina in a thin stream - this will prevent the formation of lumps. The milk should be warm.
  • Next, place the pan on low heat and stir the mixture until it boils.
  • At the moment of boiling, you need to add sugar.
  • The contents are thoroughly mixed and cooked for about four minutes after boiling.
  • The finished porridge is poured into plates. You can also add fruit.

This recipe is the simplest of all known.

But there is also another one - “secret”. Few people are familiar with this technology, but it is extremely useful. Its essence lies in soaking semolina. During this process, the cereal absorbs all the moisture, which is why there will be no lumps during the cooking process.

The original way

For this procedure you will need:

  • one glass of milk;
  • three tablespoons of semolina;
  • ten grams of oil;
  • salt and sugar.

Having prepared all the necessary ingredients, you can begin the process itself.

  • You need to pour the milk into the pan. It is better that the device is small, but with a long handle. This device makes it easy to control the porridge when it starts to rise.
  • Sugar should be added to milk. If jam is added to the porridge, it is not recommended to add sugar.
  • To avoid lumps in the dish, pour cold milk into the cereal. As mentioned earlier, this process allows the cereals to absorb all the moisture, which prevents lumps from forming.
  • The pan with the mixture should be placed on low heat, and the product should be stirred during cooking, otherwise the porridge will stick to the bottom of the pan.
  • As soon as it boils, reduce the heat to the lowest power, moving the pan to the very edge of the burner. The porridge can be removed after about three minutes, when it becomes thick.
  • The resulting dish must be poured into a plate, and then add berries.

What's the best way to cook?

Semolina porridge is a universal product that you can experiment with for a long time. It can be prepared with almost any ingredients.

Of course, the best porridges are made with milk or water, and the best cooking appliance is an ordinary stove.

For kids

Liquid porridge is useful for people of all ages, in particular for children. Despite the fact that there are a huge number of different mixtures and additives in the world designed specifically for children, many parents still believe that natural porridge is better.

In order for a child to eat this product, it must be prepared correctly.

Step-by-step instruction:

  • add milk to the pan;
  • You need to pour semolina there and leave for three minutes;
  • the swollen semolina should be sent to cook on the stove;

The secret is simple. Before starting cooking, pour a small amount of water into a clean pan. Water should cover the entire bottom of the container, this amount will be enough. Recipe No. 1

When the pan is cooked, milk is poured into it and brought to a boil. When the milk has boiled, you need to add semolina porridge. It should be poured out very slowly, stirring continuously in the pan. It is this stage that is responsible for ensuring that the semolina porridge turns out thin and without lumps. The dish is then cooked for several minutes over very low heat. It is highly not recommended to leave the stove, as the porridge may escape. You should control the process and constantly stir the dish.

At this stage you should add sugar. Its amount should be equal to the amount of semolina. But if you wish, you can reduce or increase the dose of sugar or completely abandon its use. When the sugar is added, the dish should continue to be stirred and simmer for a few more minutes. You can add a pinch of salt. Then the porridge is poured into a bowl and a piece of butter is added. Instead of butter, jam or condensed milk is also added to semolina. Strawberry, raspberry, and currant jams work well. You can add not only jam to the dish, but also fresh fruits and nuts. All these healthy products go well with semolina porridge. Moreover, semolina will be delicious hot and cold.
