She chose different fillings, and we always wondered what the pies would have this time.

It was jam, apples, pears, berries and rhubarb from the garden. But sometimes she surprised even us - she put something unusual in the pies. One of these fillings for sweet buns was the usual soft toffee or “Korovka” candies.

If you put toffee or “Korovka” candy in the middle of a bun or pie, the filling melts and turns into a viscous, aromatic, tasty mass, vaguely similar to condensed milk and nut butter for sandwiches at the same time.

Today I suggest you prepare yeast buns with kefir and filled with sweets (soft toffees). The pastries are delicious, quite simple and unusual. I prepare yeast dough for buns using kefir, on one baking sheet, baking dish.

The recipe for candy buns with the specified amount of ingredients can be adapted for baking in a slow cooker.

I place these delicious buns close to each other; we call them “friendly family.”


Ingredients:

  • Flour – 2 cups (regular, 200 grams),
  • Egg - 1 pc.,
  • Dry instant yeast Saf Moment - 2 teaspoons,
  • Kefir or sour milk - 180 ml,
  • Butter - 50 grams,
  • Granulated sugar - 3 tablespoons,
  • Salt - a small pinch
  • Vanillin or vanilla sugar - to taste,
  • Vegetable oil for greasing the mold.

Cooking process:

Pour yeast with warm sour milk or kefir. If the milk is a little colder, it’s not scary. But if it’s hot, the yeast won’t work.

Let's leave the yeast to ferment and move on to other ingredients.

Lightly beat the eggs with sugar until smooth. We don't need foam, it's not a biscuit.

Melt the butter in the microwave or on the stove. Make sure that the oil does not boil, but simply melts. This is what I do: I put the saucepan on the stove. I cut the butter into small cubes, and as soon as the butter begins to melt, I remove the butter from the heat and stir. This way the oil will never boil.

You can also melt butter in a slow cooker. We set the heating mode and after a couple of minutes the oil will soften.

Combine eggs, flour, yeast mixture, liquid butter, salt and vanilla sugar.

Quickly mix the dough with your hands.

It is better to add flour gradually so that the dough comes out soft and airy.

It’s very convenient to knead the dough for buns in a bread machine; you fold everything up and take out the finished dough!

You can turn on the oven for 5 minutes, turn it off and place the dough in a voluminous form. Please note that the dough rises a lot. So the shape should be 2-2.5 times larger than the volume of the dough. In winter, the ideal place to climb is next to a hot radiator. Well, if your multicooker has a dough proofing function, use your assistant.

Take the kefir bun dough out of the bowl, knead it on a table dusted with flour or greased with vegetable oil, and divide it into small balls. Place 3 toffees in each cake and form into a bun. I got 7 medium candy buns.

Place them on a baking sheet greased with vegetable oil. It is optimal if we take refined vegetable oil. But here you can decide to experiment. Take nut oil and your baking will change greatly for the better.

I place the “friendly family” of buns close to each other in a tall round shape and let the yeast dough rise.

Before baking, brush the top of the buns with yolk or a whole egg, which must be stirred in advance.

Put it in the oven to bake. We bake toffee buns at 180 degrees.

The buns bake very quickly. Usually 30-35 minutes are enough for complete readiness.

    Buns “Friendly Family” in a slow cooker

I bake these filled buns in a Panasonic multicooker with a power of 670 W without 3D heating for longer than in the oven, 70 minutes, in two batches, 50 minutes on one side and 20 minutes on the other.

By the way, Panasonic does not have a “dough” mode; for proofing, you can use regular heating, turning it on and off for a few minutes.

Take the finished buns with sweets out of the oven or slow cooker and let them sit in the pan for a couple of minutes. And then carefully remove from the mold.

It’s better to let it cool, so it will cut well.

Sweets include berries and fruits, as well as cottage cheese and caramel. If you want to get more, you can add meat, mushrooms, eggs, rice, potatoes or cabbage.

Of course, you shouldn’t make one pastry with sweet and savory fillings. The dough for the “Friendly Family” pie, the recipe for which contains berries, caramel or fruit, should be unsalted. Every housewife knows this. But for “Friendly Family” pies, the recipe for which is based on a savory filling, it should be salted.

The secret to making the perfect dough

The recipe for “Friendly Family” buns is based on yeast dough. It is not easy to prepare, and not everyone succeeds the first time. To prepare the ideal yeast preparation, you must follow certain rules:

  1. Use only fresh products.
  2. Don't forget to sift the flour, preferably twice.
  3. Reduce the amount of milk by half, compensate for the deficiency with mineral water.
  4. Avoid drafts in the room when working with dough.
  5. Do not knead the dough with wet hands.
  6. Use only egg yolks.
  7. Oil should be added to the dough at the end.
  8. You need to knead the yeast dough for at least half an hour.

How to make a “Friendly Family” pie with caramel?

To prepare the “Friendly Family” pie, the filling recipe of which will contain caramel, you need:

  • Fresh milk - 2 cups.
  • Wheat flour - 4 cups (approximately).
  • Eggs - 4 pcs.
  • Dry yeast - 2-3 sachets.
  • Sugar - 10 tbsp. spoons
  • A pinch of salt.
  • Butter - 300 gr.
  • Caramel pillows - for filling.

Add sugar, salt and yeast to warm milk. Mix everything well and leave for 15 minutes to activate the fermentation process. Then add the yolks to this mixture. Add the dough to the sifted flour and knead the dough. Divide the risen dough into small pieces for future “Friendly Family” pies. The recipe contains caramel, but you can also use chocolate candies. Grease the mold with oil and place the butter circles, which have previously been dipped in oil, tightly there. Bake the pie in an oven preheated to 190-200 degrees for about 25-30 minutes.

Step 1: prepare the dried apricots.

Wash the dried apricots under running water and place in a medium saucepan. Fill with regular cold water and leave to soak for 15-20 minutes. After this, put the pan on the fire and bring to a boil. Then turn the heat on low and cook the dried apricots some more 10-20 minutes. If it becomes soft, it's time to turn off the burner. Drain the water and place the dried apricots in a blender or meat grinder. Attention: pour some water into a cup, as we will need it later! Grind dried apricots using the necessary equipment. Place the crushed ingredient in a frying pan and add 15-20 grams of sugar and fill with the remaining water. Boil the dried fruit mixture over low heat until thickened. Important: From time to time, stir everything with a spoon so that the sugar is completely dissolved and the pieces of dried apricots do not stick to the base of the pan. Pour the jelly-like component into a bowl.

Step 2: prepare the cherries.

You don't have to use fresh cherries for this recipe; you can use frozen ones. In the second case, it needs to be defrosted. Place the cherries in the pan and add 15 grams Sahara and simmer over low heat until the sugar is completely dissolved and the liquid has evaporated. After this, transfer the cherries into a bowl and sprinkle with a small amount of starch. This must be done to ensure that the filling does not leak out during the preparation of the pie. Mix everything well again with a tablespoon.

Step 3: prepare the cottage cheese.

For this dish, both fresh homemade cottage cheese and ready-made curd mass are suitable. In the first case, put the cottage cheese in a meat grinder or blender and grind it to a fudge state. This is best done, of course, using a blender. Transfer the processed component into a bowl and add 50-60 grams of sugar. Mix everything well with a spoon.

Step 4: prepare the dough.

Nothing beats a home test. But, if guests are on the doorstep, and you really want to surprise them with something delicious, you can also use ready-made frozen yeast dough for this pie. We just take it out of the freezer in advance. Important: Be sure to use a product from trusted brands, since low-quality dough will not only spoil the entire taste of the baked goods, but will also waste the entire filling. So, when the dough has thawed, put it on the kitchen table, sprinkled with a little flour, and knead it several times by hand. This will help our cake rise faster and become much fluffier after cooking.

Step 5: prepare the “Friendly Family” Pie.

On the kitchen table, use your hands to form a “sausage” out of the dough. Using a knife, cut it into small pieces the size not more 5 cm. Afterwards, we manually make balls out of each piece and set them aside for 5-7 minutes so that the dough can rise and take shape. Using a rolling wheel, we make cakes from each ball. Using a teaspoon, place a small amount of filling on each flatbread. Our “Friendly Family” pie is small pies. That's why we seal each crust with filling, like a pie. Attention: We pinch the edges of the dough with our hands so that the filling cannot leak out during baking. We put the finished pies aside so that they can brew and take shape. Place margarine or butter in a small saucepan. Over low heat, stirring constantly with a tablespoon, melt the ingredient until liquid. Afterwards, generously grease the baking dish and its walls with a small piece of butter. Dip each pie on all sides in the melted mixture and place it in the frying pan, side down. Attention: Place the pies tightly next to each other in a flower-shaped circle. And to complete our composition, be sure to place another pie in the center. Preheat the oven to temperature 220°C. We put the cake in the oven and from time to time we check the degree of doneness of the baked goods. When the surface of the pie begins to brown, reduce the oven temperature to 200°C and bake our dish for 25-30 minutes. Then turn off the oven and take the cake out to cool.

Step 6: serve the “Friendly Family” Pie.

No one will remain indifferent to such wonderful baked goods. The most convenient thing is that each piece of the pie can be easily taken out without using a knife. If desired, the pastries can be sprinkled with powdered sugar and served with mint tea.
