I think many people cook fried zucchini with garlic - it’s a simple and tasty recipe. But still, I decided to post it on my blog, since this particular dish is the calling card of our dacha. We always prepare it for barbecues.

Our guests usually ask, although I think they know the answer one hundred percent: “Will there be zucchini with garlic?” And we answer: “Of course they will.”

So let's cook. I don’t know how you prepare this dish, we usually dip the zucchini in flour and then fry it in a frying pan. You can, of course, fry without flour, but it is the flour that then gives a crispy crust and gives a certain piquancy to this dish.

Fried zucchini with garlic

Ingredients:

  • zucchini
  • garlic
  • vegetable oil
  • mayonnaise

I will not write the quantitative composition of the products, since this is all quite arbitrary and depends on the number of people and your appetite.

Recipe for fried zucchini with garlic:

  1. We only plant zucchini at our dacha. You can read about the difference between zucchini and white zucchini, and learn about the benefits of this miracle vegetable.
  2. To prepare fried zucchini, I usually take young zucchini - they have a thin and tender crust and do not need to be peeled, and also do not need to be freed from seeds, since when they are milky ripe, they are not felt at all.
  3. This means that all we have to do is wash the zucchini and cut it into rings 0.5 - 0.8 cm thick.
  4. Place them in a cup, add salt and stir.
  5. Prepare the garlic - chop it.
  6. Pour vegetable oil into a frying pan and heat it up.
  7. Let's start frying the zucchini. Dip each ring in flour on both sides, place in hot oil and fry on both sides until golden brown. Of course, if you have to cook a lot of zucchini (suddenly you have a big company), then the frying oil needs to be changed at least once, since the flour usually starts to burn.
  8. Place the finished zucchini on a large flat plate or dish. Further, at your request. I do both. You can put a little chopped garlic on each zucchini and brush with mayonnaise. Or you can make garlic sauce by adding chopped garlic to mayonnaise and grease the zucchini with this sauce. And so, we seasoned the fried zucchini with garlic and mayonnaise, put the next portion on them, season them and continue until our rings are finished.

Here is a simple recipe for fried zucchini with mayonnaise and garlic. Serve them to the table and delight your loved ones with a delicious dish. Zucchini fried with garlic is good in any form - as a hot dish or as a cold appetizer. Even if you don't eat them right away and put them in the refrigerator, the next day they won't have that crispy piquancy I was talking about, but that won't make them any less delicious.

By autumn, zucchini seeds already become large and hard, so they should be removed. The skin of my zucchini is soft, so I left it on. If your zucchini has tough skin, it is best to cut it off.

Cut the zucchini lengthwise and select the core with seeds. If the zucchini is young and the seeds are soft, then you don’t have to remove them.
Cut zucchini slices about one and a half centimeters wide.


Salt and pepper the zucchini pieces and sprinkle with chopped garlic (2 cloves). For better mixing, you can add one or two tablespoons of vegetable oil. If you use oil, you will need to put the zucchini in a bowl and mix everything there.

Pour flour into a flat plate and roll each piece in it.
The frying pan with oil should already be heated. Each piece of zucchini rolled in flour is laid out directly on it.



Turn the heat to medium and fry the zucchini for about three minutes on each side. The softness of the zucchini depends on the roasting time. I like the vegetable to remain with a slight crunch.
If you see that the zucchini quickly begins to burn, this means the heat is too high and needs to be reduced.



Mayonnaise sauce is made quite quickly.
Peel the carrots and grate on a fine grater. It could just be a fine grater or a hedgehog grater.
Peel the remaining 2 cloves of garlic and chop through a press.
You can make the sauce from mayonnaise alone, but I prefer to mix it half and half with yogurt or low-fat sour cream.

Place mayonnaise, yogurt (sour cream), chopped garlic and grated carrots in a bowl.

While it is boiling, you should take zucchini slices one by one and roll them in wheat flour on both sides. Then the vegetables must be carefully placed in a hot bowl and fried until soft and golden brown.

After frying the zucchini, it is recommended to place it on napkins and deprive them of as much oil as possible. Next, you can start preparing the delicious filling. To do this, grate the garlic and processed cheese on a small grater. Both products need to be mixed together with mayonnaise, and then add chopped herbs and ground walnuts.   • hard cheese - 130 g;
  • sunflower oil for frying - 70 ml;
  • wheat flour - 60 g;
  • iodized salt - 2-3 pinches;
  • ripe tomatoes - 3 pcs.;
  • low-fat mayonnaise - 120 g;
  • fresh greens - a bunch.

Young zucchini should be washed, peeled and cut into slices 2 centimeters thick. They need to be salted and rolled in wheat flour. Afterwards you need to fry on one side in sunflower oil. Place the finished zucchini pieces on an oven tray, fried part up. Next you need to start preparing the filling. To do this, you need to grate the cheese and garlic, add fresh herbs and mayonnaise to them. The resulting mass should be distributed over each piece of zucchini, and then cover the aromatic mixture with a circle of ripe tomato.

Add cornmeal to a bowl or plate to coat the zucchini. Unlike wheat flour, corn flour does not absorb oil as much during the frying process. In addition, the crust on fried zucchini is very crispy and tasty from corn flour.

Dip each circle in cornmeal and place in a hot frying pan with oil. When frying zucchini, keep the heat to medium so that the vegetables are well cooked on the inside and do not burn on the outside.


In the meantime, you can make the nut filling. To do this, combine ground nuts, chopped garlic cloves and grated cheese in a bowl. Season the sauce with sour cream, salt and, for piquancy, honey (literally 0.5 tsp).


Sour cream for the sauce can be replaced with mayonnaise or natural yogurt. Stir the nut sauce and refrigerate.


Leave the fried zucchini for 15-20 minutes to cool. If you apply sauce to hot zucchini, it will run and will not hold its shape.
